Start-up seeks to guarantee meat eating quality using science

Guaranteeing the eating quality of a steak or lamb chop is the aim of Adelaide start-up MEQ Probe.

The company has developed medical grade probes to use in abattoirs to objectively test eating quality traits such as marbling and shear force.

The laser probe was originally developed by the University of Adelaide's Centre for Nanoscale BioPhotonics in Adelaide to measure the pH of cancerous and non-cancerous tissue.

MEQ Probe CEO Jordy Kitschke the meat industry was really excited about the opportunities this technology could have for consumers.
