A new wheat breeding trial in New South Wales is putting flavour first.
About 120 historic Australian varieties are being studied by plant breeders at the University of Sydney's Narrabri campus, and 24 have been selected for taste testing.
According to wholesaler John Campbell, who initiated the trial with baker Michael Klausen, it's a major departure from the usual traits which dominate the commercialisation of new grain varieties.
